This is Olive Oil Poached Pacific Kingfish with a Roquette Pesto on a bed of Parsnip Mash and lightly dressed Lime Olive Oil.

Vision: The fish looks fantastic. As expected from Dulcet Epicure. The lime olive oil looks nice and it brings out the Kingfish. Your pesto is not like the rest. This specially looks superb and if I had the chance to taste it then I just hope to meet expectations
Originality: I've thought of it flavor wise. But I haven't tasted a Kingfish before. But I tried imagining how it would taste or how would the outcome of the pesto, parsnip mash, lime olive oil would come together with the fish. Something worth to try really.
Technique: Plating execution is very clean. My eyes can be deceiving sometimes when it comes to this IF the fish is still moist. But I hope it was still moist when consumed.
Impact: Doesn't really make me want to eat the dish but I want to understand the flavors. Since I'm very curious as what would a pacific kingfish would taste with all the flavors.
