Description

Here is one of the most technical desserts which took a total of 5 hours to make (it was worth it)

So to start with is freshly made Vanilla Bean Shortbread at the bottom, Caramelised Orange, Orange & Passionfruit Ice-cream, Vanilla Bean and Caramel Chantilly Cream, Lindt 85% Dark Chocolate and and freshly made Honeycomb just for laughs... Unless you are very patient I wouldn't recommend doing this epic dessert, but it's the end of the year and I'm into overly ridiculous cooking challenges this time of the year

If you made this dish then please do read up on what I have to speak for about this dish. If not then please disregard as to what I say.

Vision: Looks great. Met my expectations from Dulcet Epicure. A very fruity, nutty, crispy looking sundae. It has passion fruit ice cream, vanilla and dark chocolate. And this took 5 hours to make for you. And judging by how it looks. I can say that it is really worth it.

Originality: 100% purely original. I've never heard a combination of such in any restaurant that I know of. But I wouldn't either recommend to serve this at a restaurant for 1) it's time consuming to make (even if you done your mise en place for it) and 2) There's gonna be a lot of waste. But it's really nice. Something that I would serve IF my shop was actually an ice cream parlor.

Technique: So much applied in a single dish. Baking the short crust (Short bread), making the chantilly cream, the orange and try to shoot this photo.. It was really 100% worth the effort.

Impact: The combination of flavors and feels strike me with such curiosity.. The sweetness of the orange, the sour taste of the passion fruit. The bitterness of the dark chocolate. And the crispy texture of the short bread. All smooth and crispy.. I can just imagine the flavors combined in my mouth! I'm really impressed. Maybe one of your best works by far?
