So, my brother is a Vegan, without a question one of the most frustrating demographics in the hospitality industry to please because of all the dietary requirements.
So this dish is a Sweet Basil, Roasted Roma Tomato and Capsicum Pasta, I must admit I didn't make the pasta as the pasta as its a special Vegan pasta which in all honesty is too annoying to make, but the rich sauce is most certainly of my hand.

Vision: You've always taken photo's so greatly that it highlights every color present in a dish. The tomato looks great. Roasted nicely. I would suggest confit of tomato. It would be slightly sweeter because of the sugar added during the marinating process. But never-the-less, the dish looks great and you made the roasted tomato the star of the show.
Originality: I've done this a lot of times in honesty. I can't say much but the dish is delicious. But there's nothing special to this but to a vegan this might be something tasty. Or worth eating. But again, this recipe is used often.
Technique: The dish is nice. Poor plating construction though. And roasting a tomato is easy. But it's pasta so I guess it's ok really. I mean this is how I plate my pasta most often. Because I'm always rushing to somewhere. But when I have much time on my hands I can make something like this look better on a bowl plate.
Impact: As starting off to become a pescetarian. This really looks great. I mean I often eat meat now but I'm going to shift to eating fish and vegetables next week. Anyway, this inspired me to make my dinner tonight something exactly the same. This dish will certainly hit me or push me to become vegan.

Indeed, cooking for a vegan is the ultimate challenge. Always struggling for ideas when our vegan friend visits - I just may have to try and re-create this one!! Let me know when you bring out a Vegan Recipe Book!!
