Australian Culinary Finals: Entree 2

I have been absent of late and this image is one of those reasons. This is my second entree entry for the Australian Culinary Challenge Finals. It's all very fancy posh food but I assure you its utterly delicious.

This is my award winning dish: Huon Salmon Fillet w: furikake Seasoning, Toasted Citrus Meringue, Radish, Spiced Edamame, Potato crisps, Ponzu Soused Roe, Seared Scallop and Pepper Paper.
